What You Need:
  • 1 Whole Free-range Chicken.
  • Talo Food Lube Zesty Zaddy
The Play-by-Play:
  • Get Under There: Gently loosen the skin over the chicken breast with your fingers. Squeeze the Talo directly under the skin and massage it in.
  • The Exterior: Give the outside of the bird one last "lube job" and a dusting of salt. This ensures the skin renders perfectly without burning.
  • The Heat: Roast at 200°C. The tallow helps the skin render into a glass-like crispness, while the olive oil carries the aromatics into the meat.
